We experimented with various creations until we developed our own, decadent and delicious Brookside Chocolate using these old world traditions.While we were busy perfecting our chocolates, we made sure not to forget about these delicious centres. We developed optimum standards for each variety of fruit and nut and we taught ourselves how to prepare them in such a way as to bring out their best natural flavour.
